hungry // gluten-free oatmeal brittle

Halfway between an oatmeal cookie and peanut brittle you get something called Oatmeal Brittle. A very easy + quick snack, this gluten-free oatmeal brittle is a tasty addition to your mid-afternoon coffee break.

what you need:

3 cups gluten-free oats
3/4 cup white or brown sugar
1/4 cup unsalted butter
1 tsp of pure vanilla extract
1 cup peanut butter (room temperature)
2 eggs

pull it together:

Preheat your oven to 350* F. In a large bowl mix together butter + sugar until creamed. Stir in eggs and vanilla until smooth. Add in your peanut butter. Okay so it is pretty much a deliciously sweet peanut-y mess now, right? It is time to add the oats. Stir in one cup at a time to ensure cover. Pour over a parchment sheet lined cookie pan and spread with a spatula. Bake for 15-20 minutes. Let cool and break into delicious bite-sized sharing-sized pieces. Yum.
